Thai chicken and coconut soup

Thai Chicken and Coconut Soup



Mix all ingredients minus the fish sauce, lime juice & basil in a pot.

Cook over medium high heat & do not boil.

Then add the fish sauce & lime juice serve in bowls and garnish with basil. I used previously made chicken stock and cooked chicken and it turned out delicious. I only had carrots which I liked, but any vegetable would work.


Chicken (can be either cooked or not)
1 Carrot sliced thin or mushrooms sliced (what ever you prefer)
2 lemon grass stems (white ends sliced)
5 cm ginger cut into matchsticks
1 red chili sliced
2 T fish sauce
2 T Lime juice
Basil or Thai basil
